The story behind:
Elevi Perez Rufasto owns two hectares of land in the village of Nueva Union in San Jose del Alto, at an altitude that range between 1700 and 1800 meter above sea level, where he started growing coffee 20 years ago.
Rufasto picks and processes his coffee himself, with some help from family and paid workers during the peak month of the harvest.
Once picked coffee is washed and floated before being pulped and fermented for 48 hours, until the mucilage comes off easily. Once the wet parchment is ready for drying it got laid out on raised beds on purposely built drying tent for 14 days.
After that the parchment is stored in plastic bags and placed in the storage space on the farm on pallets, where it stays for a month to equalize the humidity before going to roasters in Europe.
This coffee is the true expression of "made by hand", very few hands!
Mudei a minha opinião acerca dos lavados peruanos com este café. Mesmo muito bom na V60, moído médio-fino (18 clicks C40) com bloom de 1 minuto e bólus único depois.
Surpreendentemente doce, encorpado e com uma acidez meio cítrica a dar o toque final. Consegui expressos muito bons com este café. Voltarei a comprar certamente :)
